Food and Beverage Menus

As we welcome many overseas visitors, the menu we present is created from all Australian ingredients. The fresh seafood is flown in from either Tasmania or Western Australia and the steaks served onboard are specially chosen from Darling Downs in Queensland.

All of the menus are freshly prepared onboard our vessels to ensure maximum guest satisfaction.

Spiced citrus salmon gravlax with mascarpone cream, vanilla and seeded mustard(gf)

Spanner crab tian with avocado salsa, onion sprout, Yarra Valley salmon roe (gf)

Tenderloin of beef tartare with truffle soy garlic emulsion, daikon nori and furikake

Butterfly grilled West Australian king prawns, dill tapioca pearls, pomegranate and cilantro


1824 Prime Australian grain fed beef tenderloin with parsnip puree, black truffle jus, orange and clove emulsion, glazed heirloom baby root carrots and eschallot
Herb and pistachio crusted Huon Valley Tasmanian salmon fillets, olive oil, lemon juice, chopped tomato, parsley with glazed heirloom baby root carrots and eschallot


Coconut and mango savarin, triple chocolate mousse log, dried raspberry, chocolate soil, lemon curd
